Every morning before I open the restaurant I go to the market. This adventure begins in Sciacca, Sicily, in 1978, when a yellow bus, under a blue sky and a very hot sun, brings a young man of high hopes to his classes at the hotel school.

From there, the paths and life choices multiplied, but the path did not change: the poetry of Mediterranean dishes went its way and formed a cook, because the French say "chef", but here it is. Combined with indomitable passion and healthy patience.

Because "cooking" is a mission. It is an act of generosity: it is about giving something very intimate to others. It's a gesture that every day measures the distance between the stove and the customers' tables. An infinite and very short space, like that of an idea.
